Taste wise, if you prefer more ginger you can certainly add more~ the spices can be played with to your taste pallette, but not the other ingredients. I hope you try your shortbread recipe~ make the same way for the design to come out good~ have your dough in the fridge to be quite chilled before pressing, then let them set at least a day before cooking~ and on a solid sheet~ NOT an elevated cookie rack~ this keeps the inside moist and will only set the design on the top of the cookie.
